Roasted Butternut Squash

This recipe is a great side dish, easy, budget friendly, kid-friendly AND delicious! We usually eat this dish with some sort of animal protein. I have even used leftovers – on the rare occasion that we have any- in a breakfast hash. ┬áMy 3.5 year old loves it because “it’s sweet like cake.”

Ingredients

Instructions

  1. Peel squash
  2. Scoop out seeds
  3. Chop into cubes
  4. Toss in olive oil, salt, and pepper to coat
  5. Preheat oven to 425 degrees
  6. Lay squash flat on a roasting pan- roast for 15 minutes then take out and turn pieces over. Roast for another 15 minutes until done
